Flank Steak with Mango Slaw

This is one of the best post-work dinners that I have made in awhile. It is quick to make and an easy dinner if you don't have a ton of time, or have last minute guests for dinner. Tip: if you prep the slaw before you head out for the day it can marinate for long (i.e. it will taste even better). 

Ingredients (serves 2-3) 
1 flank steak
1/2 red cabbage
1 mango
1/2 zucchini
1/4 red onion
Sesame oil
Rice vinegar
Black sesame seeds

To Make (Slaw)
First, prepare the red cabbage slaw in order to allow it time to marinate. Start by slicing 1/2 of a red cabbage thin. Place inside a serving bowl and set aside. 

Cut the zucchini and mango into cubes, and slice the red onion very thin. Place all three ingredients into the serving bowl on top of the red cabbage. Stir in 3 tablespoons of rice vinegar, 2 tablespoons sesame oil, and 2 teaspoons black sesame seeds. Season with salt and pepper. Stir the mixture together until combined. Cover the slaw and place into the fridge to chill while you prepare the flank steak. 

To Make (Flank Steak) 
Place flank steak on a large cutting board, and season with salt and pepper on either side (and maybe a little bit of your favorite steak seasoning — Montreal Steak seasoning is my favorite). Place a drizzle of olive oil over the top and massage the marinade into the meat. 

Turn your grill on to medium heat. Place the flank steak on the grill and cook according to your preferred temperature. For medium-rare, I would do 4 minutes on each side and then cut open to test. It takes a little bit of trial and error :)
